Continuing all things Lavazza this one is  purely for adults, I wanted a coffee recipe that would make you think hmmm… I never really thought of that.  I am sure this coffee & cognac jelly will be like Marmite, you will either love it or hate it (I hate Marmite) but I love the jelly of which I couldn’t wait to give to the other half, of which he screwed up his face saying he tasted too much of the coffee (In hindsight he was probably not a great test subject, as he really hates coffee, but curiously loved my coffee cake with chocolate swirls)  Again I am a throw together kind of cook so adjust my rough measurements to fit your needs

  • 1 packet of Strawberry jelly & 1 pack of Raspberry jelly
  • A swig of cognac (about 3-4 cupfuls alcohol of your choice how about whisky or rum as an alternative?)
  • 2 shots of Lavazza espresso (pushing the shot button twice on the Lavazza Favola Plus Modo Mio machine)

Break up the jelly into a big bowl and pour the rum, and jelly over the pieces letting  it marinate for about half an hour.  Pour in 1 pint of boiling hot water, and stir to dissolve the cubes when completely dissolved add 1/2 pint of cold water, and chill in the fridge into firm. (technically its 1/2 pint of boiling water & 1/2 pint of cold water to each packet but I wanted the cognac flavour to remain strong so adjusted).  Enjoy
